This paper deals with crop and fruit drying systems. Following the introductory remarks and description of the fundamentals of drying, emphasis is given to solar drying. Types of solar drying equipment are discussed and examples are given. Evolution of direct solar dryers as a consequence of disadvantage exhibited by the natural driers is explained. The text gives the details and also an economical evaluation of a novel solar-fluidized bed grape-dryer as a case study. The text commences with recommendations and conclusions.
